A Classic and traditional strapatsada or kayianas is the best summer food. Eggs and tomato in a unique encounter with feta cheese giving its special flavor and crunchiness together with fresh oregano taking off its aromas.

The recipe
Ingredients:
4 eggs
2 ripe tomatoes
1 tbsp. tomato paste
2 tbsp. sugar
200 g. hard barrel-aged feta cheese
4 tbsp. olive oil
4 cloves of garlic confit, melted
3-4 tbsp. fresh oregano
Instructions:
This recipe is the most delicious, quick and tasty meal you can make at any time.
The garlic confit, an essential ingredient, will give it flavor and make it light and easy to digest.
Grate the tomatoes and put them together with the olive oil, sugar and garlic confit in a pan to bring to a boil.




Mix the eggs and finely chop the feta cheese.
Pour the mixture into the pan with the boiling tomato.


Add the salt, pepper and oregano.
Stir continuously until a thick mixture is formed.
Serve hot on a plate with a little freshly ground pepper or on toasted bread.
