And finally, after a long journey to the N. West of Naxos, I arrived at the Stella tavern in Eggares.
Things are simple…
And gastronomic destinations are even simpler and the simpler the tastier!
I usually don’t write rave reviews… I’m holding back a little…
But today I can’t stand it, my child, I’m going to shout it out loud…
Stella, Bravo!!!
The story begins…
On the recommendation of my foodie friend Nenela, I arrived at the small village of Naxos, Eggares…
In the North West, let’s say, quite close to Chora, in a fertile green plain that ends at the sea and, as I heard, supplies the island with vegetables.



The recipes
I felt like James Bond on a mission…
You will go to Ms. Stellamou, Nenela had said, and you will tell her the code name “Nenela” she told me and I found myself in a paradise of flavors.
With the recommendation to eat goat cheese with lemon and an omelette, ha ha ha!!!
Yes, you will call me crazy for starting from the other end of the island for an omelette.
But this was not a simple omelette!!!
It was an omelette cake, something like the fourtalia of Andros and Tinos, but twice as large and with a different taste, with many more ingredients, with plenty of Naxos potatoes, fresh onions, dried onions for sweetness, tomatoes, zucchini and their own local sausage from their pork carcasses…
All local, fresh and cooked properly.
Now, we will discuss the kid that arrived with its vegetables floating in the rich stewed broth in detail because it deserves special mention!!!


And as if the omelette wasn’t enough, broad beans arrived, cut today from the vegetable garden next door with an excess of sweetness. Her own aged Xynotiri cheese and goat cheese that deserves its own unique description.
And the genuine village food, rich with local fresh cheese, to dive in and stay inside. There among the oils, onions and capers and you won’t want to go out…


And the final blow sweet babiloni, yes babiloni, you heard right like the one from Andros that thrives here too.
The huge piece that came out of the pot that had just cooled down was cut in two. It was eaten in the blink of an eye by the company…

The result
I loved this woman …
For her smile, her hospitality, her warm motherly voice. But more for the unforgettable taste of her food!!!
For thirty-five years she has been cooking for passers-by with fresh seasonal ingredients.
Without a lot of frills and aromas, just traditional…

A meal like the old days… this food we found on our lunch table, made with love and fresh ingredients.
Yes, Mrs. Stella transmits our Intangible Cultural Heritage in the best way.
